Vegan Ranch Dressing

This ranch dressing leaves all the trans fats behind, and instead contributes healthy fats and great anti-oxidents. Plus it tastes wonderful
So, I thought when I got healthy, I would have to leave ranch dressing forever. Little did I know this ranch dressing would show up. It's a favorite at our house, and we enjoy it as a dip too.
- 1 pound raw cashew nuts Soaked for 4-8 hours then drain
- 1 1/2 cups fresh squeezed lemon juice
- 1 tablespoon Himalayan pink salt
- 3 tablespoons fresh fresh herbs
- 1 clove fresh garlic
- 2 tablespoons olive oil
- pepper to taste
Soak the raw nuts for at least 4-6 hours, then drain. Put the nuts in the blender, and cover completely with water. Blend on high until creamy, adding a bit more water as needed for desired consistency. Add herbs and pulse blender until well chopped. You can also add balsamic vinegar for a different flavor.
