Sunny Carrot Walnut Taco Meat

This is a huge success every time it's served.
If you want to try a healthy, vegan alternative to meat for your next Mexican dish, try this out. It's also a great dish I make when my vegetarian friends come over, and it's always a big hit!
- 2 cups raw walnuts
- 2 cups raw sunflower seeds
- 4 cups shredded carrots
- 1/2 bunch cilantro
- 1 1 /2 tablespoon cumin
- 1 1/2 tablespoons chili powder
- 2 teaspoons oregano
- 2 tablespoons paprika
- 2 cloves garlic
- 2 teaspoons sea salt
- 1 juice of lemon
- 1/2 cup olive oil
Start by shredding carrots in the food processor and transfer to a bowl. Next, chop garlic in the food processor then add all but the carrots, lemon juice, olive oil and agave. Pulse just a bit to maintain meaty texture Transfer to a bowl and toss in carrots and wet ingredients.
