Ingredients
- 1 whole turkey (about 12 lbs), skinless
- 2 cups quinoa, cooked
- 1 cup cranberries, fresh or frozen
- 1 cup celery, finely chopped
- 1 cup onion, finely chopped
- ¼ cup chopped fresh parsley
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried sage
- Salt and pepper, to taste
Directions
- Preheat the oven to 325°F (163°C).
- Rinse and pat dry the turkey. Season with salt and pepper.
- In a large mixing bowl, combine cooked quinoa, cranberries, celery, onion, parsley, olive oil, garlic, sage, salt, and pepper to make the stuffing.
- Stuff the turkey cavity with the quinoa cranberry stuffing.
- Roast the turkey in the preheated oven for approximately 2 hours or until the internal temperature reaches 165°F (74°C).
- Let it rest for 15 minutes before carving.
- Serve slices with extra stuffing on the side.
