Ingredients
- 1 onion
- 1 tbsp coconut oil
- 2 tsp curry powder
- 1 tsp paprika powder
- ½ tsp ground ginger or 1 piece fresh ginger chopped
- ½ teaspoon ground cumin or coriander
- 120 g yellow or red lentils
- 600 g diced pumpkin
- 400 g chopped tomatoes 1 can
- 400 ml coconut milk
- 80 g baby spinach
- ½ lemon, squeezed juice
- Salt ( to taste)
Directions
- Peel and dice the onion. Sauté in a pan until translucent, add spices while stirring.
- Rinse lentils in a colander and add to the pan. Then, add pumpkin cubes, chopped tomatoes, and coconut milk.
- Mix everything well and let the curry simmer over medium heat for 15-20 minutes, stirring occasionally.
- Mix in the spinach and lemon juice. Add more water depending on consistency.
