Pumpkin Lentil Curry

Ingredients


  • 1 onion
  • 1 tbsp coconut oil
  • 2 tsp curry powder
  • 1 tsp paprika powder
  • ½ tsp ground ginger or 1 piece fresh ginger chopped
  • ½ teaspoon ground cumin or coriander
  • 120 g yellow or red lentils
  • 600 g diced pumpkin
  • 400 g chopped tomatoes 1 can
  • 400 ml coconut milk
  • 80 g baby spinach
  • ½ lemon, squeezed juice
  • Salt ( to taste)

Directions


  1. Peel and dice the onion. Sauté in a pan until translucent, add spices while stirring.
  2. Rinse lentils in a colander and add to the pan. Then, add pumpkin cubes, chopped tomatoes, and coconut milk.
  3. Mix everything well and let the curry simmer over medium heat for 15-20 minutes, stirring occasionally.
  4. Mix in the spinach and lemon juice. Add more water depending on consistency.
