No Sugar Added Banana Bread

Not sure where to start changing your diet? Try skipping the sugar in this moist and delicious banana bread.
This is a great way to convert from Standard American Diet to a better way of eating. The more ripe your bananas the sweeter they are. If you need to ripen them further, put them in a paper bag overnight and fold over the top of bag.

- 2 1/2 large and over-ripe bananas
- 2 eggs
- 1/2 cup butter
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 1/4 cups flour
Preheat oven to 325 degrees. Blend bananas, eggs, and butter. Mix with all other ingredients and bake in loaf pan for 40 minutes. Let cool on wire rack for 5 minutes. If the bread is not sweet enough, you can add up to 1/2 cup of honey as you transition to no sugar.
Makes 1 loaf.
