Lemon Chicken Salad

Ingredients


  • 4 cups diced cooked chicken
  • 1 rib celery Finely chopped
  • 1/4 cup chopped basil
  • 2-4 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon lemon zest

Directions


  1. Boil or bake chicken breast.
  2. Cool and chunk chicken.
  3. Toss chicken, celery, basil in lemon juice and lemon zest.
  4. Salt to taste.
  5. Serve in lettuce leaf or a cantaloupe half.
