Ingredients


  • 1/2-1 cup black beans
  • 1/4 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 cup pepper jack cheese

Directions


  1. Poach an egg.
  2. In a separate pan warm 1/2-1 cup black beans.
  3. Add 1/4 tsp cumin and 1/4 tsp of salt to the beans.
  4. Serve egg over black beans, sprinkle with pepper jack cheese.

To make this dish dairy free, use dairy free cheese, or skip the cheese altogether.
