Collard Wraps

Collard Wraps are a low-carb, nutrient-dense alternative to traditional wraps, using fresh collard leaves to hold vibrant fillings. Packed with fiber, antioxidants, and crunch, they support digestive health and clean eating. A perfect option for portable lunches or light dinners.

Ingredients


  • 1 bunch fresh collard greens local if available
  • 2 cups clover or alfalfa sprouts
  • 1 cup hummus
  • 1 peeled and thinly sliced cucumber
  • 1 thinly sliced red pepper
  • 1/4 cup thinly sliced red or vidalia onion
  • 2 shredded carrots

Directions


  1. Cut the ends off of the collards and distribute the other ingredients along the leaf spine.
  2. Fold rounded edge over the filling and roll with the cut end open.
  3. Eat immediately.
