Ingredients
- 1 bunch fresh collard greens local if available
- 2 cups clover or alfalfa sprouts
- 1 cup hummus
- 1 peeled and thinly sliced cucumber
- 1 thinly sliced red pepper
- 1/4 cup thinly sliced red or vidalia onion
- 2 shredded carrots
Directions
- Cut the ends off of the collards and distribute the other ingredients along the leaf spine.
- Fold rounded edge over the filling and roll with the cut end open.
- Eat immediately.
