Ingredients


  • 2 cups raw cashew nuts soaked for 4 hours or overnight
  • 1/2 cup Coconut Oil
  • 1/2 cup raw coconut sugar (or honey)
  • 1/2 cup fresh lemon juice no seeds
  • 2 teaspoons vanilla extract (or the insides of 1 vanillia bean)

Directions


  1. Blend everything until smooth in a blender and fill pie plate or springform pan (use walnut crust recipe for this).
  2. Chill for several hours or overnight and serve with fresh berries.
