Ingredients
- 2 cups raw cashew nuts soaked for 4 hours or overnight
- 1/2 cup Coconut Oil
- 1/2 cup raw coconut sugar (or honey)
- 1/2 cup fresh lemon juice no seeds
- 2 teaspoons vanilla extract (or the insides of 1 vanillia bean)
Directions
- Blend everything until smooth in a blender and fill pie plate or springform pan (use walnut crust recipe for this).
- Chill for several hours or overnight and serve with fresh berries.
