Broccoli Gnocchi

Ingredients
- 300 grams of broccoli
- 160-180 g spaetzle flour
- 2 tbsp yeast flakes
- 1 tbsp olive oil
Directions
- Wash and chop broccoli into pieces, steam gently and puree in a blender.
- Kneed broccoli puree with flour, yeast flakes, and olive oil to form a soft dough. Adjust flour amount based on dough consistency.
- Divide dough into 6 portions. Shape them into finger-thick rolls and cut into small pieces with a knife.
- Simmer the gnocchi batches in salted water for 2-3 minutes until floating. Drain and remove cooked gnocchi.
- Heat olive oil in a frying pan and lightly saute gnocchi before serving. Season with salt and pepper, and serve with a salad or your favorite selection of side dishes.
