Blueberry Lemon Bars

Wow your dinner guests with this easy recipe combining two great anti oxidants- lemon and blueberry.
If you love traditional lemon bars, but don't love the empty calories or gluten, give this recipe a try. It's easy to make, and requires no baking.
- lemon zest of 2 lemons
- 1/2 teaspoon green stevia powder (the dried fresh herb)
- 4 cups blueberries
- 4 tablespoons raw honey (or coconut sugar)
Use the truffle recipe for the base of the bars (you can omit the poppy seeds if you prefer). Roll the truffles in coconut and press into a small square pan or pie plate. For the filling; blend the four ingredients listed above in a food processor or blender and pour over the lemon crust. Garnish with whole blueberries. Serve after cooling for a few hours or overnight.
