Ingredients
- lemon zest of 2 lemons
- 1/2 teaspoon green stevia powder (the dried fresh herb)
- 4 cups blueberries
- 4 tablespoons raw honey (or coconut sugar)
Directions
- Use the truffle recipe for the base of the bars (you can omit the poppy seeds if you prefer).
- Roll the truffles in coconut and press into a small square pan or pie plate.
- For the filling; blend the four ingredients listed above in a food processor or blender and pour over the lemon crust.
- Garnish with whole blueberries.
- Serve after cooling for a few hours or overnight.
