Ingredients
- 3 cups unbleached flour
- 1 1/2 cups white sugar
- 3/4 cup cacao powder
- 1 1/4 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon almond extract
- 1 1/2 teaspoons vanilla extract
- 4 eggs
- 1 1/2 cups safflower oil
- 1 cup shredded zucchini
- 1 cup chopped walnuts (optional)
Directions
- Preheat oven to 350 degrees.
- Grease and flour a 9 x 13 baking pan.
- Stir in dry ingredients, then add eggs and oil.
- Completely mix.
- Squeeze excess moisture from zucchini, then gently fold in zucchini and walnuts, and pour into pan.
- Bake for one hour, cake will appear moist.
- Cool completely and serve.
